I'm going to let you in on a little secret - Champagne is Magic. The fiercely effervescent wines in their youth that pop their tops and spill out of glasses- the wines that are full of citrus flavors, bright flowers, and fresh bread... these wines transform.
I first tasted 1990 Dom Perignon 2 years ago, and each bottle since then has been its own remarkable experience. This week, to celebrate a friend's success our member chilled and opened a '90 Dom and yet again this wine had it going on! The bubbles, once sharp and full have tempered themselves in a light mousse lifting the palate and allowing the flavors to rush over the tongue. The fruit, once bright and zesty has now become candied and rich. Hazelnut fills your olfactory senses and preps your palate for the incredible flavors to come. Rich caramel apples, and candied lemon take over with honeysuckle and chamomile. A truly stunning wine of which I cannot get enough.
So, let your Champagne grow up a little, give the magic time to happen, and I think you'll agree with me when I say that 30 really is the new 20.
