Antoine spent eight years working at Domaine Leflaive and later launched his own biodynamic consulting firm in 2016, building relationships with growers that eventually allowed him to source grapes and craft wines himself; his independent production began in 2021 despite frost-reduced yields. His philosophy is traditional yet precise, favoring long fermentations, malolactic conversion, extended lees aging for about a year, minimal sulfur, and élevage in varied vessels such as barrels, foudres, and amphorae to preserve purity and texture. The 2023 Bourgogne Chardonnay—made from the classic Chardonnay varietal grown in Burgundy’s regional appellation—shows airy floral aromas, citrus and white-flower notes, and gentle spice from oak, reflecting the elegant, mineral-driven character typical of the region’s entry-level wines.
