Crafted to highlight the soul of four distinctive terroirs around Châteauneuf‑du‑Pape—spanning Vinsobres, Visan, Buisson, and Estézargues—Mon Cœur is traditionally composed of roughly equal parts Syrah and Grenache (with Mourvèdre and Cinsault making up the rest), from vines aged 20–60 years. Jean‑Louis oversees every step: certified-organic farming, careful harvest from growers aligned with his philosophy, seamless fermentation in stainless steel, followed by aging in a blend of neutral oak barrels, demi-muids, and large foudres.
